We also love aged Cuban rum, the vanilla and caramel and fruit and spice of it, and the sense of connecting to the music and the history of the place.\u003c\/p\u003e\n\u003cp\u003eSo we spent a year working out how the two could live together. It starts with a seven year old Havana Club, rich enough to drink on ice on its own. We lightened the vermouth, because the rum is already sweet, and balanced it with grapefruit bitters rather than the Angostura a Manhattan would take.
