Most bottled versions taste of cordial. That is the problem we set out to solve.

So there is no juice in ours. We took a lime apart, worked out what it is actually doing, and rebuilt it as Myatt's Sours, our own acid base. It gives the brightness of fresh lime every time and it pours clear, which is why the drink is the colour of water rather than the colour of a slush puppy.

Straight from the freezer into a chilled coupe. Skip the salt. Nothing to shake: there is no fresh ingredient in it to wake up.

The other way, and the one we drink in the summer: pour it long over ice and top it with soda water, or with a dry champagne if the day deserves it.

Master medal, The Spirits Business Autumn Blind Tasting 2023.

Nobody agrees who invented it. At least eleven people have claimed it. We use the Picador from the 1937 Cafe Royal Cocktail Book, which makes the Margarita, arguably and annoyingly, a British invention.
